Tuna Tataki (Trostel’s Dish)

Black Bean Vinaigrette Ingredients:

1/2 cup Hoisin Sauce(chinese BBQ sauce)
1/2 cup Chili-Garlic Sauce
1/4 cup Rice Wine Vinegar
1/4 cup Soy Sauce
1/4 cup Vegetable Oil
2 Tbsp Sesame Oil
1 can of prepared Black Beans

-Whisk together first 4 ingredients

-Slowly add vegetable and sesame oil, whisking to combine

-Drain and rinse beans

-Stir beans into vinaigrette

Tuna Ingredients:

1 10-12oz piece Saku Yellowfin Tuna
1/2 cup Whole White Sesame Seeds
2 Tbsp Vegetable Oil
Salt and Pepper

-Heat oil in a medium to large sautee pan

-Coat one side of tuna with sesame seeds

-Season other side with salt and pepper

-When oil is slightly smoking sear tuna for 1-2 minutes on each side

-Allow to cool completely

-Thinly slice tuna at an angle

Ingredients for Sushi Rice

2 cups Steamed Sushi Style Rice
1/2 cup Ginger Flavored Rice Wine Vinegar

-While the rice is still warm, gently stir in vinegar

-Allow to cool completely and form into "torpedos"
