Citrus Poached Snapper (Leonetti’s Bella Cucina)

Ingredients for Snapper:

  • 8oz red snapper filet
  • fruit of 1 lemon 1 lime , and 1 orange
  • 1 cup citrus juice
  • 1 cup white wine
  • 1 teaspoon cilantro
  • 1oz cooking oil
  • 1 cup water
Ingredients for Risotto:
  • 1 cup risotto
  • 1/8 cup diced yellow onion
  • 1/8 cup diced tomato
  • 1 tea spoon fresh basil
  • 1 cup chicken stock
  • 1 table spoon grated ramano

Directions:

In saute pan combine white wine, citrus juice, fruit wedges, water. Turn heat on high and let come to a boil. Lightly salt and pepper the snapper filet than add to the poaching liquid. Lastly add the cilantro into the pan.
In a separate saute pan add oil and let heat. when hot add onions and tomatoes, salt and pepper lightly.  When onions have cooked down, deglaze the pan with chicken stock, add in the risotto and the basil and ramano cheese.
