1. Pound ostrich steak out to 1/4″ thick. In a bowl, mix together goat cheese, carmelized onions, spinach, and cooked sausage. Place filling on center of steak and roll. Then, wrap bacon around steak roll.
2. Place the stuffed steak on a sheet tray and bake at 450 degrees, until medium rare on the inside (about 15 minutes or 125 degrees).
3. Serve with mashed potatoes, green bean bundles and mustard brady sauce.
To make mustard brandy sauce, saute shallots moil-flambe with brandy. Add heavy cream, grainy mustard, and tomatoes. Reduce until thick.
