Secrets Served: Seared Lamb with Potato Croquettes

Serves 4-6 people
2 lbs of lamb rack, sear in a hot pan and finish in the oven at 400 for 8-10 min.

Potato Croquettes:

  • 4 oz. goat cheese
  • 1 lb mashed potatoes (use cream and butter for the mashed potatoes, just enough to make them creamy)
  • .25 cups flour (add enough flour to ball up the potatoes)
  • Salt and Pepper to taste

Mix ingredients together and make 2 oz. balls

Bread the potato balls and fry for 2 min. or until golden brown

Sautéed Spinach:

  • 2 tbls  garlic
  • 2 tbls  red onions
  • 4 tbls stewed tomatoes
  • 1 tbls butter
  • 8 oz. spinach

Cook the onions, garlic, tomatoes in  butter for 2 min.

Add the spinach and cook until wilted about 2 min.

 

Balsamic Reduction:

  • 1 cup of balsamic vinegar

Reduce in a pan on medium heat until it thickens about 20 min.
