SECRETS SERVED: Gazpacho
- 4 Roma tomatoes, seeded and diced
- 1 lime, juiced
- 1/2 red onion, diced
- 1 small jalapeno, seeded and minced
- 1 bunch green onions, chopped reserve 3 inches of stems for garnish
- 1 cucumber, diced
- 2 garlic cloves, minced
- 3 tbl. chopped cilantro
- 1 poblano pepper, diced
- 1 green pepper, diced
- 1 qt. tomato juice
- 1 tsp. ground cumin
- 1 tsp. siracha
- salt and pepper to taste
Combine all ingredients in food processor or in large container in an immersion blender (recommended) is handy. Using food processor, blend all ingredients until somewhat smooth, leaving a little bit of chunky texture. Serve in rocks or martini glass and garnish with green onion stem and lime wedge.
