Grilled Angel Food Cake and Stone Fruit
- 1 Prepared angel food cake
½ Cup brown sugar (or substitute sugar with Splenda®)
Pre-heat grill to medium-high or high heat. While the grill is heating, wash and cut each fruit in half, remove the pits and cut the angel food cake into wedges. Toss the fruit in the sugar (or Splenda® for a lower calorie option). Carefully spray the grill with cooking spray and place the fruit cut-side down on the grill. Turn the fruit after a minute or two to the other side to cook thoroughly. Fruit is ready when soft and heated through. Remove the fruit from the grill. Carefully re-spray the grill with cooking spray and also spray each side of the cake wedges. Place the wedges on the grill for 30 seconds to 1 minute on each side, until the cake has nice grill marks. The grill caramelizes the cake, but it does not need to be heated through.
Cut the cooked fruit into smaller bite-sized pieces and serve with a wedge of grilled angel food cake. Enjoy!
