SPAM & Basil Quiche

  • 1 refrigerated pie pastry
  • 1/4 cup onion finely chopped
  • 1 (12 ounce) can of SPAM Classic
  • 1/2 cup chopped fresh basil
  • 4 eggs
  • 1 cup heavy cream
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Italian herb seasoning
  • 1/2 cup shredded Swiss cheese
  • 1/2 cup grated mozzarella cheese

 

 On a lighted floured surface, unroll pastry. Transfer to a 9-inch pie plate. Trim pastry and flute edges. Line crust with foil. Bake at 450 degrees for 8 minutes. Remove foil and bake 5 minutes longer. Cool on wire rack. Reduce oven to 350 degrees. Finely chop onion. Dice Spam into mini pieces. Chop basil. In mixing bowl place 4 eggs and beat. Add heavy cream and flour and whisk until smooth. Add in onion, herbs and fresh basil. Mix well. Add in cheeses and stir. Add SPAM. Pour mixture into baked pie crust. Bake at 350 degree for 50-55 minutes. Let stand 10 minutes before cutting and serving.
