SECRETS SERVED: Cheddar Apple Crisp with Red Wine Reduction

  • 6 small tart apples, sliced into 1/8th pieces
  • 3/4C Sugar
  • 1/2C AP Flour
  • 1/2C Soft butter
  • 1tsp nutmeg
  • 1/2tsp cinnamon
  • 1/2tsp ginger
  • 1/3lb sharp cheddar cheese
  • 1/4tsp salt

Preheat oven to 375 and grease an 8x8 pan

 Place apple sliced into bottom of pan, Mix remaining ingredients  together and sprinkle over apples

Bake for 30 minutes until apples are tender and top has browned.

Plate apple crisp and serve with a thin slice of sharp cheddar cheese on top.  Drizzle with Red Wine Reduction.

Red Wine Reduction Ingredients

  • 1 bottle Red Wine
  • 2C Sugar
  • 1/2tsp fresh Thyme

Boil and reduce down to consistency of syrup

Cocktail:  Ingersoll Rhyme

  • 2oz apricot infused rye whiskey
  • 3/4 oz dry vermouth
  • 1/2oz thyme simple syrup
  • 1/2oz fresh lemon juice

 stir with ice, strain and serve up.  Garnish with a sprig of thyme.
