SCHOOL SNACKS: Healthy Eating After Class

More kids are heading back to class this week, and that means some hungry stomachs when they get home from school. Parents may be looking for new foods to fuel the kids throughout the day.

Elsa Kopriva is learning a lesson in healthy eating before she even starts preschool. She says, “I like apples.” Her mom says, “I try to provide lots of fruits and vegetables.”

Kristen Steinbach with Whole Foods Market in West Des Moines offers a few kid friendly snack ideas that are heavy on the fruits and vegetables, starting with “apple smiles.” She says, “We’re just going to dip the apple slices in almond butter and dip them in some granola.”

She also suggests “fancy ants on a log.” She says, “It’s kind of a twist on the classic with peanut butter and raisins. We’re going to just jazz it up a bit. And, you can have a lot of fun with this.”

This version includes almond butter spread on celery logs, topped with sliced grapes, dried cranberries and pumpkin seeds. Steinbach says, “These are raw pumpkin seeds, so these are actually another healthy source of good healthy fats.”

Steinbach says snacks should include healthy fats, like seeds, nuts or avocado. And, each snack should be nutrient dense, include fruits or veggies and skip the processed stuff. She says, “Produce is my go to for healthy on the go things.”

You can also look for convenient packaged items. Just make sure you turn the box over and read the label closely. Steinbach says, “Anything like this, you want to look for a really short ingredient list, so not a whole lot of additives, additional artificial sweeteners.”

As for Elsa, she seems to like the apple smiles. Her mom says, “We may have to pick some of that almond butter up. She seems to enjoy it.”

But, she may need to find a substitute for the “fancy ants on a log.” Elsa says, “I don’t like celery.”
