Family Business at Iowa State Fair Continues Decades-Long Run

DES MOINES, Iowa — A family business hasn’t missed the Iowa State Fair in seven decades.

Carl Cardaman began serving food near the administration building in 1946. Several years later, he concocted the sandwich he’s known for to this day.

It’s called “Carl’s Gizmo Sandwich” and it’s made of Italian sausage, ground beef, mozzarella cheese, and a special sauce on an Italian roll.

Cardaman’s daughter has since taken over the reins and says she’s put her own twist on that sauce.

“My dad had a sauce, but I’ve updated it through the years,” said Carla Wood. “So I’ve improved it as far as I’m concerned.”

Wood hopes her son will eventually take up the business.
