George Formaro’s Rib Rub and K.C.-Style Sauce

George’s Rib Rub

2 tbsp paprika
1 cup brown sugar
1 tsp granulated garlic
1 tsp ground chipotle pepper
2 tsp ground celery seed
1 tsp ground mustard
1 tsp ground cumin seed
2 tbsp seasoned salt
1 tsp chile pepper
1 tsp leaf thyme
1/4 tsp black pepper


1. Heat oven to 275 degrees.

2. Remove membrane from backside of ribs and rub spice mix.

3. Place in single layer on a baking pan or large cookie sheet.

4. Cook for 3 hours until bone can be easily pulled away from rack.

5. Cool and slice into individual ribs, coat with sauce and bake in 400 degree oven for 20 to 30 minutes.

George’s K.C. Style Sauce

1 32 oz bottle of ketchup
1/4 cup of yellow mustard
1 cup cider vinegar
4 tbsp Worchestershire sauce
1 tsp allspice
1/4 tsp cinnamon
1 tsp garlic
1 tsp black pepper
1/4 tsp onion powder
1/2 tsp liquid smoke
1 cup corn syrup or brown sugar
1 tbsp ground celery seed
1 tsp ground chipotle pepper
1 tbsp salt
1 tbsp chili powder


Combine ingredients and cook at least 20 minutes.

You can add thinks like adobo or jalapeno peppers for some added heat.

You can also customize this recipe by adding honey, molasses, espresso powder, or different jams or preserves such as peach or raspberry to make it your own.
