Coconut Shrimp & Pineapple Sauce (Castaway’s Bar & Grill)

Coconut Shrimp


1 cup coconut
1 cup panko
1/2 cup cracker meal

Directions: Mix all ingredients together. Cover shrimp in flour, dip in egg wash, and then cover in coconut breading.

Pineapple Dipping Sauce


6 cup pineapple
1/2 cup red pepper
1/4 cup onion
1-3/4 cup sugar
1/2 cup orange juice
2 Tbsp lemon juice
1/4 cup pineapple juice
1/3 cup vinegar
1 cup applesauce
1 tsp salt
2 cup mayo

Directions: Chop pineapple. Fine dice red pepper and onion. Saute red pepper and onion on high heat for 3 minutes in a little amount of butter. Then add the sugar and pineapple to pot and saute until they become soft. Add the rest of the ingredients (besides the mayo) and bring back to a boil. Simmer for 20 minutes until it looks like a marmalade. Let cool and mix with mayo.
