Pizza Dough Recipe
Makes 2 (16-inch) Pizza Rounds
2 cups bread flour1 cup water2 teaspoons active dry yeast
2 cups warm water (78-85ºF)4 teaspoons sea salt or regular salt5 ½ to 6 cups bread flour2 tablespoons olive oil1 teaspoon sugar
To make starter: Mix flour, water, and yeast in a large bowl, cover, and let rest overnight at room temperature.
To make dough: Mix water, sugar, salt, and enough of flour into starter to make a soft dough. Knead dough on a floured surface for about 5 minutes. Divide dough into 2 pieces, shape into round balls, and let rise, cover for 3-6 hours in a cool place. Preheat oven to 500ºF; make sure to preheat at least a half hour to make sure the stone reaches temperature. Flatten dough balls and roll to desired thickness. Place on a floured pizza peel. Place toppings that you wish onto pizza. Insert pizza into oven and bake till golden brown. Enjoy!
Pizza Dough (makes one pizza or two thin pizzas)
1 cup water 75 to 85 degrees1 package yeast2 teaspoon sea salt or regular salt2 tsp sugar2 TBS olive oil2 ½ to 3 cups bread flour
To make a crisper pizza crust – add additional bread flour
Mix water, yeast, salt, sugar, and olive oil together. Dissolve yeast. Slowly add flour until soft dough forms. Knead for 10 minutes. Divide into 2 parts. Let rise in separate bowls for 3-6 hours. Preheat oven to 500ºF; make sure to preheat at least a half hour to make sure stone reaches temperature. Dough is now ready for pizza. Roll out to desired thickness. Place on a floured pizza peel. Place toppings that you wish onto pizza. Slide pizza off peel directly into oven on a baking stone.
Meat Lovin' Pizza
Spread 1 cup of Gateway Market pizza sauce directly on top of your rolled out dough, do not go all the way to the edge Add 2 cups shredded mozzarella or a combination of Gateway Market's fresh mozzarella and shredded mozzarella Top with 1 cup precooked Gateway Market sausage (available in Grab and Go section) or cook the sausage before using Add about 25 pepperoni and if desired add about 4 to 6 ounces Nduja (available at Gateway Market). Split sausage and hold in one hand, with the other hand use a spoon and remove marble size pieces of sausage and place them on the pizza
Slide onto a preheated (450 to 500 degree) baking stone and bake until nicely browned
Fancy Pants Pizza:
Slice 1 small onion and sauté in 1 tablespoon of oil until nicely caramelized, season with a pinch of salt Sauté 1 1/2 cups mushrooms in 1 tablespoon of oil, season with a pinch of salt and cook until all the liquid has been cooked out. You can bake them in an oven the same way if you'd like.
Spread about 2 tablespoons olive oil on rolled out pizza dough, add 2 teaspoon of garlic and massage all over the dough. The dough should like this :) Shred or thinly slice 6 to 8 oz each young of Asiago or Fontina or Fontal
Add this to the rolled out, oiled dough
Top with the onions and mushrooms and slide directly on preheated baking stone and bake until crust is nicely brown When pizza is done drizzle with about 2 teaspoons of white truffle oil (available at Gateway Market) Slice and serve
