Machine Shed's Cattleman's Steak

Yield: 2


  • 2 - 9oz. Top Sirloin
  • 1  small onion (minced)
  • 2  cloves garlic (minced)
  • 3 tbsp. butter
  • 12 oz. sliced mushrooms
  • 1 tsp fresh thyme
  • 1 tsp kosher salt
  • 1 tsp black pepper
  • 3 tbsp extra virgin olive oil
  • .5 cup shredded Swiss cheese
  • 2 cups fresh bread crumbs
  • Herb sauce
  • 2 cloves garlic (minced)
  • 1/2 tsp dried basil
  • 1/2 tsp dried thyme
  • pinch salt
  • pinch black pepper
  • 1 tbsp pork base
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 cups heavy cream

In a sauce pan sauté the garlic, herbs, salt, pepper, pork base for several minutes, then add the flour and cook for 2 - 3 minutes on low heat.  Next, add the heavy cream and bring to a simmer so the sauce will thicken and adjust the seasoning with salt and pepper if needed.


Pull steaks out at room temperature and fire the grill up.  Sauté the garlic, onions, and mushrooms in the butter until tender, then add the salt, pepper, and thyme and toss.  Combine the mushroom mixture with the bread crumbs and fold together.  Add the olive oil and Swiss cheese then set aside.

Season the steaks with salt & pepper and grill to the desired temperature and set aside for 3-4 minutes to let it rest so the juices redistribute.  Next, cut the steak in half equator like and stuff with the mushroom Swiss stuffing and top with the herb sauce.  Enjoy!!!
