  • Make up falafel using your favorite recipe (many can be found online)
  • Saute falafel in a pan with olive oil until browned and slightly cripsy
  • While browning falafel, mix together a salad of cucumbers, red onion, roasted red pepper, tomatoes, red cabbage, fresh parsley and green leaf lettuce.
  • Mix in your favorite Lemon-Tahini Dressing (again an online search will find many dressing recipes)
  • Add sauteed falafel to the top of the salad.
  • Top the completed salad with a vegan greek tzatziki sauce (recipes for this sauce can be found online)
