Fareway Dietitian Whitney Packebush said one new food trend hitting the recipe boards is peanut butter bites.
Packebush said there are many ways to make a tasty peanut butter bite but her favorite way is on the healthy side. Packebush said she uses oatmeal, peanut butter, honey or maple syrup, flax seed, chia seeds and vanilla extract. You can add fruits, nuts and chocolate to taste.
Peanut Butter Bites
Makes about 15 bites
Total time: 5 minutes
- 1 cup oats, old fashion or instant
- ½ cup natural peanut butter
- ½ cup ground flaxseed
- 1/3 cup honey
- 1 tsp. vanilla extract
Optional ingredients: flaked coconut, nuts, chia seeds, pumpkin seeds, chocolate chips
COMBINE all ingredients in a large bowl. FROM into bite sized balls and STORE in the refrigerator.
