Hasselback Sweet Potatoes
Makes 4 servings
Total time: 45 minutes


  • 2 sweet potatoes
  • ½ Tbsp. canola oil
  • Salt, to taste
  • 1 Tbsp. butter, melted
  • 1 tsp. ground cinnamon
  • 2 Tbsp. chopped pecans
  • 2 Tbsp. maple syrup
  • ½ tsp. vanilla extract


PREHEAT oven to 425⁰F.

PLACE sweet potatoes between 2 chopsticks and CUT a slit every ½ inch along the potato, making sure not to slice all the way through (slice only to the chopsticks).

BRUSH the potatoes with canola oil and SEASON with salt. BAKE for 30 to 40 minutes, or until soft.

REMOVE sweet potatoes from the oven and increase oven temperature to 450⁰F.

In a small bowl, COMBINE remaining ingredients and SPOON mixture over sweet potatoes.
