Here is a Mediterranean Take on the traditional Mexican 7-Layer Dip!

Mediterranean 7 Layer Dip
Makes 4 cups
Total time: 20 minutes


  • 1 (8 ounce) container hummus
  • 1 tomato, diced
  • ½ cup diced cucumber
  • ½ cup nonfat Greek yogurt
  • Salt, to taste
  • 1/8 tsp. paprika
  • ½ Tbsp. chopped fresh dill
  • 1 (14 ounce) can artichoke hearts, chopped
  • 2 roasted red peppers, diced
  • ½ cup crumbled feta cheese
  • 2 Tbsp. minced fresh parsley
  • Kalamata olives, optional



SPREAD hummus on the bottom of an 8x8 dish. LAYER with tomatoes and cucumber.  SPOON Greek yogurt over vegetables and SPREAD with a rubber spatula. ADD salt, paprika and dill. LATER the artichoke, red peppers and feta cheese. SPRINKLE with parsley and GARNISH with olives, if desired.
